Now, back to the food. Kristine is one of those galley-geniuses that every reputable yacht charter broker wants to clone.  After our sumptuous meal and an immensely deserved round of applause, we asked Kristine about the extent of her professional training. Eight jaws dropped when she told us that she had no professional training whatsoever! Zip! Zero! None! The exquisite cuisine and creative presentation we had just experienced had all come from her Mom, her self-teaching and her extraordinary and quite obvious passion for food. The most astonishing revelation, however, was yet to come. Having just served a superb 3-course lunch to three vegans, one pollo-pescatarian, and two undeclared, she disclosed that less than 48 hours prior to the luncheon, her supplier admitted he’d forgotten her order and she was forced to re-do her entire menu based upon whatever local ingredients were available. Garnished with Red Peppers, Toasted Sesame Seeds, and Fresh Cilantro Dessert: Vegan Layered Cheesecake with an Almond Crust, a Layer of Salted Date Caramel, and a Cinnamon Cashew Cream. Served with a Homemade Coconut Based Vegan Ice Cream, Fresh Berry Sauce, and an Almond and Date Crumble. Lunch Menu for the Non-Vegans Starter: Seared Sea Scallops with a Pomme Puree, Orange Braised Fennel, Brûléed Grapefruit Pieces, and a Lobster and Citrus Emulsion. Garnished with Fennel Fronds Entrée: Fresh, Locally Caught Yellow Fin Tuna with an Onion and Pepper Crust, Served Over a Bed of Sautéed Bell Peppers. Accompanied with an Israeli Whole Wheat Couscous Salad with Fennel Seeds, Toasted Seeds, and Fresh Herbs. Accompanied by Butternut Squash Purée, Oven Dried Cherry Tomatoes, Kalamata Olives, and Pea Shoots Dessert: Orange Infused Crepe Cake Filled with a Dark Chocolate Mousse. Served with a Homemade Vanilla Ice Cream, Chocolate and Almond Crumble, Meringue Buttons, and a Duo of Sauces- Passion Fruit and Fresh Berry
